Today is day 7 of the Kombucha fermentation process. According to the instructions this is the day to check the batch and see if it is slightly fizzy and sort of a sweet/tart blend. Yep! Nicely fizzy, slightly sweet but with a little tartness in the back.

So I’ve poured the kombucha into waiting glass jars (finally my obsession with keeping all glass jars with lids is purposeful!) The culture is in about an inch of the kombucha still fermenting and growing thicker.

Tomorrow I’ll start a new batch with that culture/SCOBY and this time use my favorite: decaf irish breakfast tea from Trader Joe’s. And then I can start tweaking the flavors. 😀
